Update a contact (partial)
PATCH/contacts/:id/edit
Partially updates an existing contact. Only fields included in the request body
will be changed. Fields not included are left unchanged. Empty values are ignored
unless you send "overwriteWithBlank": true.
If the unique identifier values in the payload (e.g. email) identify another contact,
the request is rejected with 422 ("email: This field must be unique.").
